- 1 onion chopped
- 2 garlic cloves
- 2 tbsp. butter
- 6 cups celery sliced thin
- 1 cup potatoes sliced thin
- 1 green apple sliced thin
- 4 cups veggie or chicken broth
- 1 bay leaf (remove before blending)
- Salt and pepper to taste
- Celery leaves for garnish
Heat the butter in a pot over medium high heat add the onion and stirring occasionally letting the onion get golden about 5 minutes. Add the garlic and stir 1 minute until fragrant then add the potato, apple, celery, bay leaf, broth and salt and pepper. Cover bring to a boiling, turn heat down and simmer gently until potatoes are tender, about 10 minutes. Turn heat off, remove bay leaf. Using an immersion or regular blender, blend until very smooth. Serve and garnish with the celery leaves.
