Spaghetti Squash Spaghetti


1 Spaghetti Squash
Olive oil
Salt and pepper


Preheat the oven to 400º F.
Prepare a baking pan with sheet of wax paper.
Cut the squash in half lengthwise. With a spoon take out the seeds and ribs (you can also bake the seeds separately, they are a delicious snack). Spread each half inside with olive oil in a small amount and add salt and pepper. Place each half with the cut side down in the baking pan and roast it for 30 to 40 minutes (the time varies on the size of the squash and the power of the oven). It must be tender but firm (al dente). Remove from oven, turn it upside down and let it cool. With a fork, scrape and sponge the strands from the outside inwards so that they look like spaghetti. Prepare your favorite spaghetti sauce for this recipe or you can simply add pieces of tomatoes, garlic, olive oil and basil.
