Yummy Pumpkin Bread

Ingredients

1 ½ cup almond flour
1/4 cup oat flour
2 tbsp oats
1 cup pumpkin puree
2 tbsp soft butter
1 tsp baking powder
1 tbsp pumpkin pie spice
½ tsp grated ginger
1/3 cup maple syrup
1 large egg
1/3 cup milk (almond)
Pinch salt

Preparation:

Pears layer: In a medium pot cook the pears with all ingredients at low heat until they are soft and keep their juice for about 10-15 minutes. Place the lid for the first 7 minutes cooking. Once cooked reserve it.

Pumpkin bread

Heat oven to 350 ºF, coat 8”x 4” baking pan with oil or butter. In a bowl blend butter, egg, almond milk, vanilla and maple syrup. In another bowl whisk together flours, oats, baking powder, spices, and salt. Add to butter mixture and blend just until mixed. Pour the batter into a baking pan and bake for 30 to 35 minutes. Remove it from the oven and let it cool. Add the layer of pears on the top, serve and enjoy it!
