Mango-Cucumber Wrap/Rollo de Mango-Pepino

There are good calories and bad calories, and this month’s Mango-Cucumber Wrap is an example of … good calories!

The many benefits of this recipe are that it boosts your fruit and vegetable intake, it increases your energy, and it’s an excellent source of fiber, which are important for a healthy digestive system and the regulation of blood sugar. Plus, the mango and mint flavors are sure to please your family or guests!

Ingredients:

Mango-Cucumber Wrap

  • 1 carrot
  • 1 mango
  • 1 cucumber
  • 4 romaine lettuce leafs
  • mint leaves
  • 1 lemon wedge

Ingredientes:

  • 1 zanahoria
  • 1 pepino
  • 1 mango
  • 4 hojas de lechuga romana
  • hojas de menta
  • 1 rodaja de limón

Preparation:

1. Wash carrot, mango, and cucumber. Peel off cucumber skin, cut it in half and take out the seeds. Peel mango and carrot skin.
2. Cut cucumber, carrot and mango into thin strips, and set them aside in a bowl.
3. Do one roll at a time. Place 1 leaf of romaine lettuce on a plate. Put prepared fruits and vegetables in the middle, top with a sprig of mint and wrap into a roll.
4. Squeeze lemon wedge over roll and serve.

Preparación:

1. Lava la zanahoria, el mango y el pepino. Pelar la piel del pepino, cortarla por la mitad y sacar las semillas. Pelar el mango y la piel de zanahoria.
2. Cortar el pepino, la zanahoria y el mango en tiras finas, y ponerlos a un lado en un plato.
3. Hacer un rollo a la vez. Coloque 1 hoja de lechuga ro-maine en un plato. Ponga las frutas y verduras preparadas en el medio de la hoja, cubra con una ramita de menta y envuélvalo en un rollo
5. Exprima el limón sobre el rollo y sirva.
